Here’s a meal to get everyone in the mood for the upcoming holidays: baked ham with a savory apricot/pineapple glaze, mixed vegetables, and mashed potatoes. To top it off, using just one slice of baked ham along with a healthy whole wheat wrap, you can quickly whip up for lunch the next day.

Think of this as a pre-Thanksgiving warm-up. In fact, you may enjoy this glaze so much that you’ll use it for your main course next Thursday or whenever you want to make a ham or turkey. Give it a try to see what you think. It’s really simple to do and takes less than 10 minutes.

Ingredients

(6-8 servings)

– 2-3 pounds of precooked ham

– 1 bag of frozen mixed vegetables

– Instant Potato Buds (you will also need milk, butter and salt)

to glaze:

– 1/4 cup dark brown sugar

– 1 tablespoon of Dijon mustard

– 8 oz. canned apricot

– 1 can of sliced ​​pineapples

– 2 butter spoons

– 1/2 cup of chopped white onion

For the leftover ham wrap:

– low calorie whole wheat wraps

– grated mozzarella cheese

– optional: green lettuce

one. Preheat oven to 325 degrees. Hopefully the pre-cooked ham you purchased already has pre-cut slices started for you. You can simply take a sharp knife and continue those cuts 3/4 of the way to the bottom of the ham. Doing this allows the glaze to seep through and really flavor the whole piece of meat and not just stay on the outside.

two. To make the glaze sauce, first dice a white onion into small pieces until you have about 1/2 cup. In a saucepan over low heat put the 2 tablespoons of butter along with the 1/2 cup of chopped onion. Stir well for about 6-7 minutes.

3. Add 1/4 cup dark brown sugar, 2 tablespoons Dijon mustard, 8 oz. of apricot jam and 3 slices of pineapple, but only add 1/4 cup of the pineapple juice from the can (do not add the entire content). Continue stirring the mixture well for another 7-8 minutes on medium/low heat.

Four. Place the ham in a baking dish and carefully pour the glaze mixture over the ham. Try opening the slices with a fork or other utensil so the glaze has a chance to cover each side of each piece. You can place one or two pineapple slices on top and use the rest of the pineapple slices that should still be in the can around the whole ham.

5. Place uncovered pan in oven on center rack and cook for one hour. If possible, carefully remove after 1/3 of the cook time has passed so you can re-glaze all over the ham, and once again after another 1/3 of the time has passed. This really helps to coat the meat in that delicious pineapple apricot glaze.

6. While the ham is cooking you can begin to boil the frozen mixed vegetables. This will only take about 15 minutes, so you may want to wait a bit until the ham is halfway through cooking. When ready, bring 4 cups of water to a boil and add the entire bag of frozen mixed greens.

7. Finally, the mashed potatoes (which takes less than 8 minutes), check the side of the box for instructions on how many servings you want to make. Keep in mind that if you plan to have mashed potatoes for leftover meals or to add to ham wraps, you may want to make a bit more to have enough later.

8. When serving your appropriate serving size, spoon a tablespoon or two over the ham and even potatoes if desired. That frosting is delicious so I hope you enjoy it!

Leftover Food Idea: Glazed Ham Wrap

This is a simple leftover lunch idea that you can whip up in less than a minute, as long as there is at least one piece of ham left over. The only additional items you’ll need are some shredded mozzarella cheese, lettuce, and a whole wheat wrap. These whole wheat tortillas are great to have on hand because they are only 50 calories each, unlike a flour tortilla which can have up to 150 calories each.

Take a piece of glazed ham and cut it into small pieces. If you like, you can layer lettuce leaves on the whole wheat wrap, then layer the ham pieces and spread on a heaping tablespoon of mashed potatoes. Top with some shredded mozzarella cheese and carefully wrap like a burrito. You can store this wrapper in a piece of aluminum foil in the refrigerator until you are ready to take it to work. Enjoy it alongside a piece of fruit and a bottle of water and you’ll have a great healthy lunch that’s much better (and cheaper) than a fast food meal.
